This spicy raspberry cream soup is not only delicious but is also packed with ingredients that have beneficial effects on health, making it a truly nutritious and healthy dessert or appetiser. Moreover, this recipe is dairy-free, sugar-free, and gluten-free. It was created by Andrea Trenka, a dietitian at Zenon Clinic, using Essa collagen powder.

Ingredients:

  • 500 g raspberries
  • 400 ml coconut milk (canned version)
  • 50 g Essa collagen powder
  • 200 ml water
  • 50 g sliced almonds
  • cloves, allspice, star anise, cinnamon, nutmeg, cardamom, lemon zest

 

Method:

  1. Bring the water to a boil, then steep the spices in a spice bag to infuse their flavours into the hot water.
  2. Blend the raspberries, coconut milk, and collagen powder with a blender until smooth.
  3. Pour the spiced tea into the raspberry-coconut milk mixture and mix well.
  4. Garnish the soup with sliced almonds and serve chilled.
