Baked carrot cake oats

This delicious and protein-rich baked porridge is our latest favourite, which you can eat at any time of the year! A perfect breakfast or even afternoon snack with your coffee, which is healthy, nutritious, delicious and easy to prepare!


Stored in the refrigerator, it will last for several days, and if you like to eat it warm, it is just as delicious when heated in the microwave as it is fresh.

 

Prep time: 5 minutes

Baking: 35-40 minutes

 

Ingredients: 

  • 1 large ripe banana, mashed
  • 1 cup rolled oats
  • 1 scoop (30g) Essablend vegan vanilla protein powder
  • 1/2 tsp cinnamon
  • ½  flat tsp baking powder
  • 1 medium carrot, grated
  • Handful of walnuts, crushed
  • 1 tbsp maple syrup
  • 1 cup milk of choice
  • 1 cup plant yoghurt
  • honey

 

Method: 

  1. Heat oven to 180 degrees Celsius.
  2. In a greased oven safe container/baking tray, combine mashed banana, followed by the oats, vanilla protein powder, cinnamon, baking powder, grated carrot, walnuts, maple syrup, and milk. Mix until well combined.
  1. Place in the oven and cook for about ~35-40 minutes, or until golden.
  1. Remove from the oven and allow oats to cool in the container/ tray. 
  2. In a bowl combine the yoghurt with some honey and cinnamon. 
  1. Upon serving, if serving warm the next day - reheat a slice in the microwave for ~1 minute or serve as is/cold. Tip: We recommend always adding the yoghurt topping on the freshly cut slices when being served for the best taste.
