Peanut Butter Protein Oat Cookies

Soft, peanut buttery oat cookies made with a handful of simple ingredients and ready in less than 30 minutes. Perfect with your afternoon coffee, as a mid-morning snack or whenever you feel like something sweet.

Oats, ripe banana and creamy peanut butter come together with Essa World Vanilla Vegan Protein, while dark chocolate, flaxseed or chia seeds can be added for an extra twist.

Ingredients

  • 2 cups oats
  • ⅓ scoop + 1 tbsp Essa World Vanilla Vegan Protein
  • ½ tsp cinnamon
  • ¼ cup peanut butter
  • 1 large ripe banana, mashed
  • 1½–2 tbsp honey or maple syrup
  • ¼ cup coconut oil, at room temperature or melted
  • A pinch of salt

Optional:

  • ⅓ cup finely chopped dark chocolate
  • 2 tsp flaxseed
  • Chia seeds

 

Instructions

  1. Preheat the oven to 180°C and line a baking tray with parchment paper.
  2. Combine the dry ingredients in a mixing bowl.
  3. In a separate bowl, mix the wet ingredients until well combined. Add the dry mixture and stir until everything comes together.
  4. If using dark chocolate, flaxseed or chia seeds, gently fold them into the mixture.
  5. Scoop out small portions of the mixture using a tablespoon and roll them into balls. Gently flatten each one into a round cookie, approximately 0.5–1 cm thick, and arrange them on the prepared baking tray. If the mixture feels a little too dry, add a splash of plant-based milk.
  6. Bake for 16–18 minutes, or until the cookies are lightly golden.
  7. Allow them to cool for around 15 minutes before serving.

 

Enjoy them on their own, alongside your morning or afternoon coffee, or take a few with you for an easy homemade snack on the go.
