Protein oat cookies
It's really hard to resist these divine peanut butter cookies! Simple yet delicious sweets that are healthy, nourishing, and can be prepared in just 25 minutes. I always have these ingredients in my kitchen, so anytime I crave something sweet but still healthy, I can make them right away.
Perfect for an afternoon snack or even a little treat with morning coffee. I also like to grab a bite before exercising to energise myself a bit.
Prep time: 5 minutes
Baking: 18 minutes
Ingredients:
- 2 cups of oats
- ⅓ scoop + 1 tbsp Essablend vegan vanilla protein
- ½ tsp cinnamon
- ¼ cup peanut butter
- 1 large ripe banana, mashed
- 1.5-2 tbsp honey or maple syrup
- ¼ cup coconut oil (room temperature or melted)
- A pinch of salt
- Optional:
- ⅓ cup of finely chopped dark chocolate
- 2 tsp flaxseed
- Chia seeds
Instructions:
- Preheat the oven to 180 degrees Celsius. Prepare a baking sheet and line it with parchment paper.
- In a mixing bowl, thoroughly combine the dry ingredients and set aside.
- In another mixing bowl, thoroughly mix the wet ingredients, then add the dry mixture and combine the ingredients thoroughly.
- If you want to add optional ingredients to the cookies, mix them in as well.
- Using a tablespoon, scoop out small portions, first forming them into balls in your hands, then flattening them to about half to one centimetre thickness and giving them a round cookie shape. Then, place the cookies on the baking sheet lined with parchment paper. (If the mixture feels a bit dry, you can add a little plant-based milk.)
- Place the baking sheet in the oven and bake the cookies for 16-18 minutes until golden brown.
- Let the cookies cool for 15 minutes.
