Protein energy ball recipe

Today’s recipe

I think it’s a great energy fuel and tastes delicious. I like to have it as a snack before lunch, but sometimes I get one before or after a workout. It is very nutritious, full of excellent ingredients, gluten free and vegan. It is definitely one of my favorites!

Preparation time: 15 minutes

  • 7 dates pitted (Medjool dates are our favorite)
  • ¼ cup rice syrup or agave
  • 2 tbsp peanut butter
  • 1 cup roasted, unsalted cashew nuts (you can also use almond)
  • 1  scoop (30g) Essablend vanilla protein
  • 1 tsp ground cinnamon

Place all the ingredients into a food processor. Process until you reach a crumbly mixture that sticks when pressed together. Let's form candy-sized balls out of them, my tip is that we can make 12-16 pieces of this amount. You can roll them into crushed cashews if you’d liek! One tip: Next time, add a little pollen to your ingredients!
