Mi a fehérje?

A fehérjék nagy molekulák, amelyek számos funkciót látnak el az emberi szervezetben. A fehérjét energia előállításra fogyasztjuk, de ezeknek a komplex molekuláknak sokkal nagyobb jelentőségük van. A fehérjék enzimatikus és metabolikus reakciókban, immunválaszban, véralvadásban, DNS replikációban, sejtek és szövetek szerkezetében (ismerős a kollagén neve?), transzport- és jelátviteli molekulák a szervezetben, számos egyéb biológiai funkció közül. Ennek a sokoldalú funkcióknak az oka a fehérjék által létrehozható különböző 3-dimenziós szerkezetekben és a számos aminosav-sorrend miatt lehetséges. A sokoldalú funkciók mellett a fehérjék leginkább az izom-csontrendszeri funkcióik miatt ismertek. Az izom maga is fehérje rostokból, izomrostokból áll. Az izmok a fehérjét energiaforrásként is használják. Nincs is kétség afelől, hogy miért kapnak olyan nagy figyelmet azoktól, akik rendszeresen sportolnak.

Mik is az aminosavak?

Az aminosavak olyan molekulák, melyek a fehérjék alap építőelemei. Az emberi szervezetben előforduló fehérjék több milliárd különböző kombinációból állhatnak, összesen 20 különböző aminosavból. Az aminosavak organikus molekulák és két csoportba oszthatók: esszenciális és nem esszenciális aminosavakra. Az esszenciális aminosavakat étrendünkkel kell bevinnünk, mivel ezt a kilenc aminosavat szervezetünk nem tudja előállítani. Ez azért is fontos, mert szervezetünk az aminosavakat használja a fehérjeszintézishez. Ha egy aminosav hiányzik, a fehérjéből hiányozni fog egyik építőeleme. A többi tizenegy aminosav is fontos a fehérjeszintézishez, de nem esszenciálisnak nevezik őket, mert szervezetünk elő tudja állítani és nem szükséges őket étrendünkből bevinni.

There is a special subgroup of amino acids, called branched-chain amino acids which are leucine, isoleucine and valine, all essential amino acids. They promote protein synthesis; they are important in metabolic and signalling pathways. The consumption of BCAA is preferred when pursuing physical activity, as they can be oxidized by the skeletal muscles and used as energy during exercise. Strenuous exercise can lead to lactic acid build up in the muscles causing metabolic acidosis and muscle soreness. BCAA supplementation has been shown to decrease the level of lactic acid in muscles by facilitating glucose metabolism, also meaning lower blood glucose levels. Recent research has found that BCAA reduce the level of circulating free fatty-acids in the blood. Through a complex biochemical pathway, this can eventually result in the reduction of the sensation of tiredness and fatigue during exercise. Leucin, isoleucine and valine are the most dominant amino acids in the human skeletal muscle in a ratio of 2:1:1 respectively. Protein from plant sources?
