Carrot cake protein bites

If you crave festive flavors in a healthy version: Carrot Cake Bites

You'll only need a few minutes and a small amount of ingredients, but most importantly, make sure to have a multifunctional food processor on hand! 

Prep time: 5 minutes

Cooking: 15 minutes


Ingredients:

  • ½ cup nuts
  • 1 tbsp shredded coconut 
  • 1 tbsp Essa Vanilla Vegan Protein Powder
  • 1 cube fresh ginger
  • ½ carrot, finely chopped
  • 3 tbsp oats
  • 1 tbsp fresh lemon juice
  • 1 cup dates
  • 1 tsp cinnamon

 

Method: 

  1. Blend all ingredients in a food processor.
  2. Create small balls using your hands. 
  3. Roll balls in shredded coconut. 
  4. Place them into the refrigerator for 10 minutes. 
  5. Bon appétit!
